Kaffir Limes (makrut), Organic and Biodynamic

We prize our Kaffir Limes (Citrus hystrix) plants, also known as makrut lime (magrood lime). They are thorny bushes with aromatic and distinctive "double" or hourglass-shaped leaves. The fruit is rough and green, and ripens to yellow and is distinguished by its bumpy exterior and its small size, about 2 inches in diameter. While the juice is not commonly used, the amazingly aromatic peel is a staple in Lao and Thai cuisine, an important ingredient in curries, adding an astringent flavor.
STORING FRUIT: We defer to the experts at the University of California Davis when we recommend storing all of our fruit at room temperature (around 70 degrees Fahrenheit) because refrigerator temperatures (usually 38-42 degrees) can damage them and/or prevent them from ripening to their best flavor and texture. Place produce in an open bowl or on a countertop out of direct sunlight to prevent produce from becoming too warm. Once cut or prepared, all fruits should be refrigerated promptly.
